Best fats to cook with, are those with the Lowest Iodine Values (that’s the test used in the fats trade to determine the no. of unstable double bonds present in the fats structure). Predictably the tropical oils, butter and olive oils score lowest for IValues alongside the unfashionable chicken fat (of traditional Chinese cooking) and lamb tallow and lard!! So that’s what to cook with if you want to avoid damaged fats which in the long term may lead to hormone disruption; mood or behaviourial problems, cancer, poor cardiovascular health and the list goes on ...

050109-20 FOOD FACTS: Butter - Butter is beginning to be valued by nutritionists again. After spending decades in the back of the pantry pushed out by the cholesterol bashing promoters of solvent derived vegetable margarines, it is now getting back into the shopping trolley and the farmer's markets. The move is especially timely as the discovery of new cardiovascular disease risk markers (CRP*, Homocysteine) valued over cholesterol. American Nutritionist Mary Enig (author of "Know Your Fats", Bethesda 2001) is at the forefront of this move. Enig, millenial successor to the 90’s fats guru Udo Erasmus, has declared war on the lipophobes of previous decades. She points out that butter like many traditionally used saturated fats (coconut, palm, lard, chicken fat), which are now maligned or undervalued in our society, have many forgotten and now well researched health benefits. Butter contains anti-microbial fatty acids e.g. lauric acid, including glycolipids, short chain fatty acids which are anti-fungal and medium chain fatty acids (MCTs) which disable viruses (watch out SARS!). MCTs has been designated as thermogenic (encourage efficient calorie burn like green tea) and along with butters CLA (Conjugated Linoleic Acid) content, help build lean tissue and encourage weight loss . The benefits of CLA were the focus of EU funded research projects EU-wide (Flair-Flow see www.flair-flow.com and BNF www.britishnutrition.org.uk (for details of research projects) not least for its anti-carcinogenic worth. Despite its widespread availability (PharmaNord, Biocare and Higher Nature) though, Danish Nutritionist Umahro Cadogan and Udo Erasmus (SAVANT) have contested the safety and efficacy of CLA as a nutrient (www.www.udoerasmus.com and www.savant-health.com). Lipgene and Ob-age projects looking at the obesity epidemic are the latest BNF projects. Butter is also low in lactose for the lactose intolerant and for those that are casein intolerant, rolls of goats butter are now hitting the shelves. Those with cow's milk intolerances often react less to Goat's Milk Products including butter as they contain a different form of the protein casein, alpha 2 and have no gamma casein. On the fats side of things goat's butter is richer in MCTs than cows butter, which on top of the aforementioned anti-microbial and thermogenic benefits can be usefully employed in poor digestion, malabsorption and infant feeding formulas because of its rapid and better digestability (finer fat globules than cow) and capability once digested to be absorbed without pancreatric lipase or bile salts (Biggart, TJl, Goat Milk for the Allergic Child, Pediatrics Today Vol. 4 No 4, 1996). All butters are generally beneficial for butyric acid content, which as every nutritionist knows, helps the gut repair after damage or invasion (provides fuel for cells lining lower intestine, helping repair and cell regeneration). Last but lost least because it contains mostly saturated fat it is ideal for cooking with because unlike vegetable oils it is stable at high heat (see What’s Cooking below).
