GOOD NUTRITION BOOKS + RECIPE READS - Hand to Mouth by Magdalena Chavez et al York: ENDpapers (info@endpapers.co.uk), Sept 2002. Ex-pat Spaniard Magdalena Chavez is one of the key personalities behind York’s now annual Autumnal Food Festival held every September (www.yorkfestivaloffoodanddrink.com or (01904) 445430. The book is an amazing array of world cuisine but draws strongly on the Hispanic tradition as exemplified in the restaurant she runs in one of the snickelways of York (le Quartier, Grapes Lane). All though not all the recipes are nutritionally "healthy" it contains a very useful table index re: gluten and wheat free veggie/vegan status of recipe at the front. The recipes are written literally as you would cook them, no perfect pictures of completed dishes to aspire too, yet richly illustrated in textual images and people-political stories (from Samerica, Yorkshire, India, Sri Lanka, Amerindians, San Fran etc) from the people Magdalena has worked alongside and these stories are cut and paste alongside each recipe. The book’s ambition is to reclaim cooking as an "art" in the manual-oral tradition accomplished as a group endeavour drawing away from the current trend of dry written accounts of recipes accomplished by a single guru chef, which it believes is an artificial construct.
